Breakfast for Champions
Overview
Ski racers need a hearty breakfast to fuel their bodies for a day on the slopes. This oat-based breakfast recipe is packed with energy-boosting ingredients to keep you going all morning.
It combines the goodness of oats, nuts, fruits, seeds and a touch of honey or maple syrup for a delicious and nutritious start to your day.
Ingredients
1 cup rolled oats
2 cups water
1/4 cup chopped nuts (almonds, walnuts, or your favorite)
1/4 cup of seeds (pumpkin, sun flower, and/or Hemp hearts)
1/4 cup dried fruits (raisins, cranberries, or apricots)
1/2 teaspoon ground cinnamon
1 tablespoon honey (or maple syrup for a vegan option)
1/2 cup fresh berries (blueberries, strawberries, or raspberries)
1 banana, sliced
Optional toppings: additional honey, a sprinkle of granola, or extra nuts
Instructions
In a medium-sized saucepan, combine the rolled oats and water. Bring the mixture to a boil over medium-high heat.
Once the oats begin to boil, reduce the heat to low and let them simmer. Stir occasionally to prevent sticking or burning. Cook for about 5–7 minutes or until the oats have absorbed most of the water and reached your desired consistency. If you prefer a thicker oatmeal, cook for a few minutes longer.
Stir in the chopped nuts, dried fruits, ground cinnamon, Hemp Hearts and honey or maples syrup. Continue to cook for another 2–3 minutes, stirring occasionally, until the nuts and fruits are heated through and the oatmeal is well flavored.
Remove the saucepan from the heat and let the oatmeal cool slightly for a minute or two.
Spoon the hot oatmeal into serving bowls.
Top each bowl of oatmeal with fresh berries and banana slices. You can also drizzle a bit of honey, sprinkle granola, or add extra nuts for added flavor and texture.
